Choosing the right potatoes

Choosing the right potatoes is a big part of the preparation process for your homemade potato pancakes. Most potato brands on the market use the same potatoes, so a little investigation can help you decide which potatoes will work and which potatoes can hold on and turn good. Choose the closest to the size of your pan. Place the potatoes on the heat and let them get the first couple of minutes under the broiler, until the skin begins to blister. While the potato roasts, you can trim the ends—if you like—and then slice the potatoes in half lengthwise, or slice them in quarters. I like to slice them in quarters. Try to use russet potatoes, like Hubbard, because of their unique spongy texture. It takes longer to roast than a russet potato.

Cut the potatoes in half.

You can choose to add salt to the potatoes before placing them on the stove; however, this may make the potatoes more difficult to peel. You can put butter as a substitute for the oil.

To check for doneness, place a knife in the middle of the potato. It should come out clean.

When the potato is done frying, place it under the broiler for a few minutes, until it is crispy on the outside and tender on the inside.

To make the potato pancakes:

1. Cut the potatoes in half.

2. Place them on a dry, flat surface.

3. Drizzle a bit of oil on top of each potato.

4. Place in a dry, flat baking pan.

5. Drizzle 2 to 3 tablespoons of the melted butter on top of each potato.

6. Place in a baking pan that has a lid.

7. Place a rack in the center of the oven and preheat the oven.
